Charcuterie Workshop at Wild Abundance

I'll be visiting Wild Abundance towards the end of their educational weekend, wherein they will have harvested and butchered a lamb. In this workshop, we'll discuss charcuterie fundamentals, and we will make fresh sausage, lamb ham, and process some other whole muscle cures.
